Almond, Fig and Cashew Energy Bars

Naturally sweet dates form a soft, caramel-like base, while figs add fibre and key minerals, and a touch of vanilla brings everything together. Make a batch ahead of time and keep them chilled for a convenient, grab-and-go workout fuel.

Makes 12 bars

200g cashew nuts

100g ground almonds

150g soft ‘ready-to eat’ or Medjool dates

100g ready-to-eat dried figs

½ - 1 tsp vanilla extract

2 – 3 tbsp water

Process the cashew nuts in a food processor for about 30 seconds. Add the almonds, dates, figs and vanilla extract and process until crumbly and evenly combined. Add the water one tablespoon at a time and continue processing until the ingredients clump together and form a ball.

Turn the mixture out of the processor and press into an 18cm x 18cm baking tin lined with cling film or baking parchment. It should be approximately 1 cm thick. Cut into bars, then wrap each bar in cling film and store in the fridge for several weeks or in the freezer for up to three months.

Energy Balls: The dough can also be shaped into small balls.
